Cooking for one is often thought of as a pain in the butt, I don’t find it that much of a problem it’s easy if you get creative. The kids are having sleepovers today so it’s just me at home, yep all by myself OMG!! So I’ve shopped, I’ve cleaned, I’ve thought too much and then got hungry. One chicken breast in the fridge, what would I turn that slippery little sucker in to? Then it came to me, Chicken & Corn Soup for lunch and Chicken Salad with Sweet Potato and Macadamia Nuts for dinner!! No toasted sandwiches for this little Posh Spice!
I chopped the chicken breast in half. Butterflied one half (chopped in half again to open up) and chopped the other half up in to small strips.
Chicken & Corn Soup
Plop the chicken in saucepan, 1x450gm can of Creamed Corn, 1xcup water, boil, done!
Chicken Salad with Sweet Potato & Macadamia Nuts (only because that’s what was in the fridge and pantry).
Grill Chicken with some Garlic. Boil diced sweet potato.Plop lettuce, in bowl, chop grilled chicken, drain sweet potato add, add a little bit of salad cream/mayo so it isn’t too dry and a few nuts. This is a great meal really satisfying as you have cold lettuce, hot chicken, sweet flavour of the potato and a crunch with the nuts, it satisfies every taste bud in your head! Both meals took less than 15 minutes to make too, how good!
And that’s how I ate clean and for less than $7. Get creative, don’t be scared of cooking for one. Always have a think about making your food go further and how to keep it cleaner. Try to avoid the crumbing and frying, heavy creamy sauces or white pasta, and you are on your way to a less bloated belly with a more satisfied felling after. Yumo!
