Why? Because it is So Much Better For You
Here is an easy way to make your meals even more healthier without going to too much trouble at all, just by swapping lettuce for spinach. Most people have Iceberg lettuce in their fridge but did you know that baby spinach is a really great swap due to it’s amazing nutritional value. Iceberg doesn’t even come close to the goodness that hides inside a spinach leaf.
Spinach is high in vitamin A&C, folate, magnesium, potassium, dietary fiber and lutein which gives eyes the ability to have sharp vision. Iceberg can’t even compete with this nutrient superstar, see the darker the vegetable the more nutrients you’re going to get. Using baby spinach in place of iceberg on sandwiches and in salads will give you more folic acid, iron and flavor in your next meal. Or get really creative and put it in your scrambled eggs, spaghetti bolognese, smoothies, curries, dips, soups, or quiches. Sounds a bit odd, or old fashioned and you are thinking of Popeye the Sailor man right, but did you see his guns? He was seriously on to something. Ditch the iceberg lettuce and buy baby spinach you wont regret it.

I love baby spinach and we eat a couple of bags a week (my husband in the “smuggled” form in omelette, spaghetti bolognaise sauce etc).
Lunch today I had a salad with quinoa, spinach, left over grilled mushrooms, fetta and balsamic vinegar – YUM!
