I love fast food, no not the Maccas type yuck, I like meals that don’t take ages to prep and cook as I am always super busy and I don’t have time to spend hours in the kitchen. Today I am sharing a meal idea I came up with purely out of being disorganised and grabbing a few ingredients from the fridge and pantry to come up with a healthy meal for me and the kids.
I grabbed one of these 90 second microwave brown rice packs to try as I only cook brown rice but it takes ages to cook like 20 minutes plus so the promise of brown rice in 90 seconds had to be tried. I had some ham, eggs and frozen veggies so I decided to whip up some healthy fried rice.
You can make this meal in 3 minutes, here’s how:
1. Switch the kettle on, pop rice in microwave for 90secs as per packet instructions.
2. Grab say 4 eggs a whisk them up, kettle boils poor hot water in a bowl over the peas’n’corn.
3. Pop eggs in microwave for two minutes, chop ham while waiting.
4. Pop peas’n’corn in the boiling water in the microwave for 1 minute.
Put the cooked rice in a fry pan, add cooked egg, add ham, add drained peas’n’corn.
Dinner is ready, how easy was that? A healthy easy kid friendly meal that you just cooked in under 5 minutes! Doesn’t get much better than that!!
